Where do you draw your inspiration from?

I draw inspiration from my love of eating great food! I’ve always been interested in food and flavours.  

What’s your signature dish?

I don’t really have a signature dish. I’m always experimenting and creating new dishes, as well as trying to improve my regular dishes. I do love cooking fish though and like to create dishes with a good balance of flavour and texture.

Favourite dish from the new Panoramic34 menu?

My favourite dish on the menu at the moment is most probably the turbot off the Saturday tasting menu. I also love the rack of lamb on the a la carte menu.

What’s your favourite seasonal produce at the moment?

This a great time of year for ‘greens’. Its great working with fresh green vegetables at this time of year – and you can’t beat fresh peas at the moment!

If you’re not in the kitchen where will we find you?

When I’m not in the kitchen at Panoramic34 I spend most of my spare time with my 4 year old son, Freddie. I also love a pint with my mates and going to the match to watch Everton.

What’s your advice to anyone starting just out on the same career path?

My advice to anyone starting out, is to believe in yourself and your ability. Listen to the experience around you, ask questions and be open to learning. Never give up, if it’s what you want to do then be willing to work hard and you’ll reap the rewards.
